Eco gastronomy refers to the joining of environmentalism and eating. It proposes a value based consumerism that fuses pleasure and principles. In other words, the idea proposes that we can eat our way to a better (more environmentally sustainable and socially just) word.
Eco gastronomy is different than diet or health promotion. These focus on the individual body, without examining the broader context in which food production and consumption occur.
Interested in eco gastronomy? Here are some ways to practice:
- get to know your local producers and eco systems.
- shop at small grocers that source locally (like Sunnyside Market), go to Farmers markets, join a CSA (Community Supported Agriculture)
- plant something edible in a garden or a pot
- support local, small scale restaurants as much as possible
